I’m a 55 yr old geezer doing SSLP twice a week, which I believe is what the Starting Strength book said I should do at my geezer age. Should I try to space my workouts evenly, at every 3 days, for recovery purposes, or just make sure I hit it twice every 7 days? Thanks.

I would start it at every 3 days like you're at, but after 6-8 weeks, I would go to 3x/wk per the normal SS protocol (for non geezers).Barbell Medicine "With you from bench to bedside"

I'm a fellow "barbell geezer" and started the SSLP back in April. I found I could manage the 3 day per week training but after approx. 6 weeks I had to decrease the weight jumps down to 1kg. Currently on week 8 of the 12 week Strength program and have continued with 1kg increases per week and have found this to be optimal for myself even with the increased training frequency. Also recommend utilising micro plates - particularly for the presses.
