Is upper back work prescribed on GPP days because the back can handle more volume than other body parts?

Not really, as I don’t think the back _CAN_ handle more volume than other similarly trained body parts or muscle groups. Depending on the specific template, direct upper back work is an accessory-type movement that can be completed at any time, e.g. on its own or after a lifting session. Programming it as GPP gives people that freedom for scheduling.
