Fat & New - What should I be eating?

I am a 29 year old male, 6’ tall, and weigh 295 lbs, probably 40%+ body fat. I want to begin the Starting Strength program. I have read about it, listened to podcasts, watched videos, etc.

I have read your article “To Be a Beast” and I calculated where I should start at based on your chart with the Fat Loss Goal - Calories 11.43 kCal/lb, Protein 1.25 g/lb, Carb 1 g/lb, Fat .27 g/lb. That came out to be 3370 Calories, 369g Protein, 295g Carb, 80g Fat.

I was listening to a video and you mentioned you typically max people out at 250g Protien and then you put the excess to Carb. That threw me off a bit. So right now I’m just trying to find some numbers to start at so I can start losing body fat and gaining strength.

I know all of these things depend on the individual and are more nuanced but I’m just looking for some simple generic numbers to start with.

For a bit more context to help you answer, I don’t eat high quality food right now, I don’t eat consistently from day to day, and I don’t track what I eat. I’m feeling a lot of motivation toward this program, once I get the diet down I know I can commit and have the discipline to stick to it. In High School I lifted weights for football and about 10 years ago I was really successful with the Abs Diet Program. Obviously that didn’t stick, but I’m not completely unfamiliar with these types of things.

Yea I think starting with improving food quality and aiming for 2500 calories per day, 220 grams of protein, and 35g of fiber per day would be a good idea - with the rest of the calories coming from carbs or fats as you prefer.
