I do ab roll outs for ab work and am wondering if it is best to just do one set and add reps to that one set over time or if I should do several sets and try to add sets. Maybe it doesn’t matter in the long run?

I think both strategies make sense, however it is likely that eventually you won’t be able to add reps to a set because a single set is not enough stimulus to progress, at this point It would make sense to add a set.
