To start, checking cholesterol during active weight gain or loss can lead to some spurious results. I typically weight until weight has stabilized for a month or so before checking unless there’s a reason to test it now.
Regarding your diet, I’m not seeing much in the way of vegetables, whole grains, or legumes, which I would favor greatly over psyllium husk or other fiber supplement. I would not expect olive oil or milk to have significant impacts on lipoprotein levels.
I also would advise against weight gain if your waist is > 36".
Lastly, I would take a look at exercise programming to see if there are any opportunities to improve what you’re doing.

That said, I can confidently say olive oil and milk have neutral effects on lipoprotein levels. Your weight, genetics, the rest of your diet, activity, and other lifestyle inputs would be more important to modify.
