Is My Laziness Increasing My Cancer Risk....

I haven’t had a lot of time to do meal prep these past few months, and have become heavily reliant on canned chicken as a staple protein source.

Reading through the source links in your “The Science of Red Meat” article, the WHO and AICR qualify “canned meats” as “process meats”, even chicken. Is this including the Costco chunked chicken breast in a can? I’ trying to determine what would make it a contributor to increases cancer risk, but haven’t come up with anything. I’m thinking maybe they’re referring to some of the chicken based spread (chicken SPAM) or other canned chicken concoctions?

Yes, canned chicken is processed. As far as the absolute risk conferred from consuming it, I’m not sure. That said, I wouldn’t recommend consuming lots and lots of processed meat, as discussed in the article.
