Started my novice LP back in November (with a lapse in there) and i have encountered the following problem.
Problem: For the last couple of weight increases I have missed the last rep of my last set.
Pattern: increase weight > miss last rep of last set for two workouts > Finally hit all reps on third session attempting that weight.
I’ve had this issues at 117.5 kg, 120 kg and now at 122.5 kg
Main Question: What should I do after missing my last rep? Attempt the rep after a rest to keep the volume, back off the weight, move to threes, kill myself ?
I’m 5’8" 82 kg (up from 72 kg) , take adequate rests (5-7 mins), don’t fatigue myself with excessive warm ups.
Just not sure how to approach this would really appreciate some advice.

If it is taking you three sessions to complete the weight, the weight selection is inappropriate for you. I’d reset the squat, if you have not done that already, get your form checked, and see if working with both those things moves you past this. If you have already reset your squat a couple of times and you have no notable form faults, you would move to intermediate programming for your squat.
TLDR-don’t do threes and don’t kill yourself. But also don’t keep doing the same weight over and over.
