Some fiber questions

Hey there, the recent fiber content is great – thanks! I’ve got two clarifying questions if I may…

First, you caution that fiber supplements should be just that, and not one’s primary source of fiber. Then psyllium husk, which I think of as a supplement, is listed with other items that are whole foods – is it reasonable to get a large percentage of daily fiber from psyllium?

Second, you share information about a transformation that happens with cooked then cooled rice and potatoes. Is it that initial cooling where the magic happens, and it’s fine to then reheat the foods? Or is the idea to be eating cold rice and potatoes?

  1. No, would not advise that the majority of your fiber intake come from psyllium. It should be used as a supplemental source.

  2. Correct, it is the initial cooling when that happens, and then it is fine to reheat.
