Questions about gaining weight and target body weight

I am curious what my target body weight should be. I am 35 years old, 5’8" tall and about 168lbs.

Background:

I have been lifting regularly for around 2-3 years, mostly fuck-around-itis. I had my appendix removed around thanksgiving and lost 10 pounds, and just finally gained it back. I am now just finishing my first attempt at the bridge 1.0 and am happy with my results. My goals are a combination of aesthetics and strength, but mostly I just want to be really strong. I will be starting the 7 Week Hypertrophy block shortly and wondering how much weight I should plan to gain. I understand that I should follow this up with a strength block, should I continue to gain weight at that point, or maintain until I run the hypertrophy block again?

My numbers as I go into week 7 of the bridge are as follows:

Squat: 315x1 @RPE 7.5
Pin squats: 285x3x4 @ RPE 8
Press: 145x4x4 @ RPE 8.5
Deadlift: 335x3x5 @ RPE 8.5
Bench: 215x4x5 @ RPE 9
